Have you recovered from your Easter festivities yet? Kids are back to school, and now it seems like life is getting back to its usual old self again. Congrats, you survived yet another holiday! <<applause>> Now, let’s take a peak in the fridge…do you have some ham….then more ham on that other shelf….a relative’s famous casserole perhaps, then, a few dozen or so other side dishes? If you can relate to any of these, please read on! (I also have a spouse that very quickly gets sick of leftovers, hopefully this isn’t the case for you too!)

I thought these fun, kid-friendly recipes would be a good way to disguise the abundant leftovers, which is also helpful if your spouse is like mine (sorry Dear, so offense or anything). A happy spouse helps make a happy house, right? -A happy wife = a happy life? Something like that!

How about some Ham & Pineapple Kabobs? With Spring weather in sight, this would be a great way to kick off ‘grill season’ and eat outside. easter3

You can also find a variety of other Easter leftovers on Pinterest. A favorite that I quickly found were these bunny deviled eggs. Are these cute or what? Best of easter5all, you’re using up some of the eggs that you and your kids worked so hard on to color. You will have colorful “bunnies” too from the dye! I will share my one of my family’s favorites that we typically do, which is to take those leftover biscuits or crossaints, and put slices of ham and cheese in them. Condiments such mustard or dijon, or microwaving them are optional. Did you have any sweet potatoes this year? Try these sweet potato pancakes. You’ll be glad you did.

Have I made you hungry yet? What about ALL of that Easter candy? Granted, it’s probably ending up in your child’s lunchbox right now, but let’s think ‘outside of the lunchbox’ for a moment…

Rachel Beck has compiled some fantastic ideas, which seriously has made me very hungry and yearning for these beyond delectable desserts. These flexible recipes use up some of that candy and can be shared too. They also make me even more glad that Easter is over, as I gave up dairy products for Lent. So now, I can enjoy these enticing treats, and I hope you will too! There’s always room for dessert….maybe not right now…but at a later time!
